    Place the rice in a fine-mesh sieve or bowl and rinse under cold water until the water runs mostly clear. Drain well. Measure the rinsed rice and set aside.

    • Rinsing removes surface starch and prevents rice from getting gummy.
    • If you skipped rinsing, expect a slightly stickier texture.
  2. Prepare aromatics and liquids

    Peel and finely dice the onion. Peel and mince the garlic. Measure the tomato paste, diced tomatoes, broth, and spices so everything is within reach.

    Tips:

    • Finely dice the onion so it cooks and softens quickly.
    • Use warm broth if you have it — it brings the pot to a simmer faster.
